You love piling up keto ice cream between our cookies, but in this summer heat, most of the ice cream ends up in a puddle instead of in your face... we’ve been there. Luckily for us, our Fat Snax scientists have cooked up a sweet solution to this sticky situation (or should we say, baked up?) The answer: whoopie pies! Aka, the no-bake keto desserts that are guaranteed to please. Better yet, they’ve got creamy, smooth, luxurious fillings that are sure to melt in your mouth...but not onto the floor. With such an easy keto recipe, you’ll be whipping up whoopie pies faster than you can scarf them down.

While we recommend our Double Chocolate Chip cookies for this recipe, this peanut butter filling is delish with our other cookie flavors. You can even wedge it between Chocolate Chip cookies, use it to top off your Brownie Bites, or, eat it straight from the bowl—at-home keto bakery say what?!


Peanut Butter Whoopie Pies

Servings: 6*

Net-carb count: 5.8 net carbs per serving

Time: 10 minutes

*If you want to cut the net-carbs to 3.8 per serving, make an open-faced sandwich instead using 1 cookie versus 2. Your whoopie-pie possibilities are endless!


  • 6 packs (12 cookies) Double Chocolate Chip Fat Snax
  • 6 ounces cream cheese, softened
  • 2 ounces butter, softened
  • ¼ cup Swerve (or equivalent amount of sweetener-of-choice)
  • 2 tablespoons all-natural peanut butter
  • 1 teaspoon vanilla extract


  1. Use a mixer to beat the cream cheese and peanut butter until smooth.
  2. Add in the sweetener, peanut butter, and vanilla. Beat until light and creamy.
  3. Do a quick taste test—if needed, add more sweetener to-taste.
  4. Refrigerate the peanut butter frosting in an airtight container for up to 5 days before ready to serve.
  5. Once you’re ready for dessert, place a Double Chocolate Cookie facedown. Use a knife to apply the frosting in a swirl, coating the whole cookie. Gently press another cookie on top and repeat with each whoopie pie.*
