Recipe: Cookie Crumble Ice Cream Bars


These perfect, melt-in-your-mouth, sweet Ice Cream bars are what your dreams are made of, with a little cookie crunch 🍦🍪 And, they're pretty easy-peasy to make...bonus points! Remember those ice cream bars you enjoyed as a kid without a worry in the world, but thought you had to give up? Well, we brought them back for you. These are a MUST before summer ends...☀️☀️

Cookie Crumble Ice Cream Bars

Makes 8 bars











2 cups heavy whipping cream

½ cup powdered sugar free sweetener

2 tablespoons vodka, rum or allulose syrup

1 ½ teaspoons vanilla extract

Pinch of salt

7 oz sugar free chocolate chips, dark or white chocolate

1 teaspoon coconut oil

1 (5oz) package Fat Snax Double Chocolate or Chocolate Chip Mini Cookies


  1. To a medium bowl, add heavy whipping cream, powdered sweetener, vodka, rum or allulose syrup, vanilla extra and salt. Stir to combine. 
  2. Pour into popsicle mold, insert popsicle sticks and freeze overnight. 
  3. The next day, add chocolate chips and coconut oil to a microwave safe bowl. Microwave at 30 second intervals until melted, stirring in between. Set aside.
  4. Add mini cookies to a food processor and pulse until crumbled. 
  5. Remove an ice cream bar from the mold. Dip into melted chocolate and immediately cover with cookie crumbles. Set on a sheet of parchment paper to set. 
  6. Repeat with remaining ice cream bars. Store in a freezer safe bag in the freezer for up to 1 month.
