Recipe: Asian Chicken Lettuce Wraps with Cracker Noodles

Can you say flavor BOMB?! These babies are jam-packed with garlicky, savory goodness and are extra-delicious when topped with a cracker crunch. Perfect for an easy weeknight dinner that will get the whole family excited. #FatYeah!
Servings: 6 servings

Time: 30 minutes
Ingredients:
- 1 pound ground chicken
- 1 medium yellow onion, chopped
- Kosher salt and freshly-ground pepper, to taste
- 2 scallions, chopped
- 1 head butter or romaine lettuce
- Crushed Fat Snax Sea Salt Crackers, for topping
Keto Hoisin Sauce:
- 5 tbsp low-sodium soy sauce or coconut aminos
- 2 tbsp nut butter
- 2 garlic cloves, minced
- 1 tsp of your favorite hot sauce (or more, to taste)
- 2 tsp sesame oil
- 2 tsp rice wine vinegar
- 1 tbsp zero-calorie sweetener, like Swerve
- Kosher salt and freshly-ground pepper, to taste
Directions:
- For the keto hoisin sauce, combine all of the ingredients in a small bowl and mix well. Set aside.
- Heat a large saucepan on medium-high heat. Add the ground chicken and season with salt and pepper. Break down the chicken with a spoon and cook for 3-4 minutes, until the chicken is browned.
- Add the yellow onions and cook for 2-3 minutes. Add in the hoisin sauce and green onions. Cook for another minute.
- Spoon the filling into each of the lettuce cups and top with green onions and crushed Fat Snax Crackers. Eat up!
