Recipe: Asian Chicken Lettuce Wraps with Cracker Noodles

 

Can you say flavor BOMB?! These babies are jam-packed with garlicky, savory goodness and are extra-delicious when topped with a cracker crunch. Perfect for an easy weeknight dinner that will get the whole family excited. #FatYeah! 


Servings: 6 servings

Time: 30 minutes


Ingredients:

  • 1 pound ground chicken
  • 1 medium yellow onion, chopped
  • Kosher salt and freshly-ground pepper, to taste
  • 2 scallions, chopped
  • 1 head butter or romaine lettuce
  • Crushed Fat Snax Sea Salt Crackers, for topping

Keto Hoisin Sauce:

  • 5 tbsp low-sodium soy sauce or coconut aminos
  • 2 tbsp nut butter
  • 2 garlic cloves, minced
  • 1 tsp of your favorite hot sauce (or more, to taste)
  • 2 tsp sesame oil
  • 2 tsp rice wine vinegar
  • 1 tbsp zero-calorie sweetener, like Swerve
  • Kosher salt and freshly-ground pepper, to taste

Directions:

  1. For the keto hoisin sauce, combine all of the ingredients in a small bowl and mix well. Set aside. 
  2. Heat a large saucepan on medium-high heat. Add the ground chicken and season with salt and pepper. Break down the chicken with a spoon and cook for 3-4 minutes, until the chicken is browned.  
  3. Add the yellow onions and cook for 2-3 minutes. Add in the hoisin sauce and green onions. Cook for another minute. 
  4. Spoon the filling into each of the lettuce cups and top with green onions and crushed Fat Snax Crackers. Eat up!
