Back to Class Lunch Ideas (No Bread Necessary)

Your boss pushed your deadline up a week. Your fourth grader just informed you he needs a 3-ring binder for class, stat. His sister is throwing a fit—she’s lost her favorite pencil. Meanwhile, you’re losing your marbles. And to top it off: it’s lunchtime. Take a deep breath. We’ve already thought up some quick, can’t-go-wrong lunches that are perfect for busy bees like you. Better yet, for these gluten-free & keto-friendly meals, there’s absolutely No. Bread. Necessary.

A is for... Apples + Peanut Butter Cheddar Crackers 🍎

If you’re craving a true American classic or it’s just one of those days where you need something satisfying in a pinch, you can’t go wrong with this combo. Spread all natural peanut butter between Fat Snax Cheddar Crackers and you’ve got yourself a pile of flavor-packed sammies. Serve with a side of fruit for a delicious, filling meal!

B is for... Burrito Bowl 🌯

Packed with flavor, but with no fancy ingredients required. Let the burrito bowl pile up sky-high! Ground turkey or beef (cooked with taco seasoning, obviously). Shaved iceberg lettuce. Bright purple cabbage. Shredded Mexican Blend Cheese. Salsa Fresca. Sour Cream. Guacamole. More guacamole. #CantStopWontStop

C is for... Chicken Parmesan Kale Salad 🥗

Sometimes for lunch, you just want to eat a salad. But what you don’t want is a growling tummy at 4pm, inquiring with a *gurgle-gurgle* “Why didn’t you eat something more substantial?” Luckily, we’ve found a delish salad recipe that’s just as easy as it is filling. Get the recipe here

D is for... Dip! *Breadless* Tuna Melt Dip, that is 🐟

Like we’ve said, bread is overrated. Hear us out: Tuna Melt Casserole Dip. Yup. You can even make a big batch of this to reheat throughout the week. Here’s the low-down:

INGREDIENTS

  • ¼ cup Keto-friendly mayonnaise
  • 1 tbsp dijon mustard
  • 1 tbsp lemon juice
  • 1 (6-oz.) can tuna
  • 1 rib celery, finely chopped
  • ½ small red onion, finely chopped
  • 1 tbsp freshly chopped parsley
  • Kosher salt
  • Freshly ground black pepper
  • A pinch crushed red pepper flakes
  • Sliced Cheddar
  • Fat Snax Sea Salt Crackers

INSTRUCTIONS

Preheat your oven to 350°. In a medium bowl, combine mayonnaise, mustard, and lemon juice. Add tuna, celery, red onion, and parsley. Season with salt, pepper, and red pepper flakes. Pour into a large ramekin or small baking dish. Place slices of cheddar on top. Bake 5-10 minutes until the cheese is melted to your liking. Serve alongside Fat Snax Crackers. (I’m drooling. Are you drooling?)

3. E is for... Easy Snack Platter 🧀
