New Year's Resolutions for 2022
Make 2022 your year of self growth!
Longer days and warmer temps can only mean one thing...summer is almost here! Your local farmers’ markets and grocery stores are soon to be full of summer staples like zucchini and berries, which are the perfect additions to any keto meal plan.
If you’re new here, we created our first seasonal eating guide for Spring with a day full of recipes that incorporated our favorite seasonal produce. We’re back at it again to bring you some easy recipes perfect for summertime. Think grilled steak, pesto pasta, and ice cream sundaes...but all keto-friendly! Enjoy these recipes outside for maximum summer vibes—they are just asking to be devoured on a porch or at a picnic!
Here’s what’s in season right now:
Chia pudding is the perfect summer breakfast option for a loungy morning because (drumroll)... there’s no cooking required! Just stir chia seeds into non-dairy milk with a pinch of your sweetener of choice, let sit overnight, and wake up to a thick and delicious pudding. Top with in-season berries for added sweetness and flavor. Enjoy by the spoonful while soaking up the sun.
For a carb-conscious take on a picnic classic, use zoodles to make a delicious pasta salad. This recipe includes tons of in-season produce including basil and tomato, and also makes a super fresh side for dinner. If you want to make your life even easier, meal prep the shredded chicken early in the week so it’s ready for your salad each day. (Psst...looking for more meal prepping tips? There’s no better time than summertime to enjoy steak fresh off the grill. This bright, citrus-y marinade will transport your taste buds to a tropical location: perfect after a long day of work. Serve up the steak and peppers as is, or enjoy in lettuce wraps for some extra crunch.
Summer and ice cream go together like Fat Snax and butter 😉 If you’re looking for a lightened-up ice cream treat, our Brownie (or Blondie!) bites make for the perfect ice cream Adults and kids alike will love these mini sundaes. Pile up Brownie Bites, vanilla ice cream, and chocolate sauce. Or Blondie Bites, chocolate ice cream, and peanut butter drizzle. We’re drooling just thinking about it!
A BLT without the bread—why didn’t we think of it sooner?! This recipe piles salty bacon, juicy tomato and creamy avocado on a slice of cucumber for a low-carb take on a classic summer sandwich. Enjoy as a midday munch or impress your fam with this delicious and easy-to-assemble veggie-packed snack.
So pull out your picnic blanket, make a big batch of your favorite drink, and get cooking!
